Pumpkin Stovetop Macaroni and Cheese – I am always on the hunt for modified mac and cheese recipes.  My kids will eat anything if I tell them it’s mac and cheese.

Pumpkin, Basil, Goat Cheese, Fig Tart – This one caught me off guard.  I’m not not sure I would have thought to combine such elegant flavors, but I’m glad I found this, because it sounds incredible.

Pumpkin, Spinach, Walnut Spaghetti – I would have never thought to add pumpkin to spaghetti, but I love butternut squash in pasta, and all those squashes are in the same family right?  Impress your friends with your culinary skills and make this full bodied and robust pasta for any fall get together.

Pumpkin Lasagna – OR this pumpkin pasta dish.  Lasagna is one of my go to recipes because it’s like veggies, cheese, pasta {sometimes some meat} and then repeat!  It’s super easy, and it’s a perfect addition to pumpkin recipes for crisp fall nights.

Roasted Garlic, Pumpkin and Leek Soup – Do I really need to say more?

Chickpea Pumpkin Coconut Curry – I was surprised to find so many diverse recipes with pumpkin.  I can’t wait to make this curry dish.  Well…technically the husband likes to cook dinner … so I can’t wait for him to make this curry dish!

Spicy Squash Soup Recipe – This one is actually acorn squash instead of pumpkin, but I’m allergic to acorn squash, so I substitute pumpkin.

Pumpkin Pie Smoothie – I don’t know about you, but smoothies are my go-to meal of choice.  It makes sense to have one of these with an extra scoop of vanilla protein powder.  Now I’ve got a well balanced meal, and it’s technically dessert.
