Foodie Friday: Watermelon Wedge Salad Recipe by See Salt

Foodie Friday + 4th of July = this simple and delicious summer salad recipe by local mama and foodie extraordinaire Jessica from See Salt.

North Phoenix Moms Blog- Foodie Friday- See Salt- Watermelon Wedge Salad

Ingredients:

  • cold watermelon
  • oranges prepped and sliced
  • red onion thinly sliced
  • arugula
  • creamy goat cheese
  • olive oil
  • balsamic or red wine vinegar
  • sea salt

Directions:

  1. Cut watermelon slice so it is round in shape and about 1 inch thick. Taking a pairing knife to the rind cut around to remove.
  2. Add thinly sliced oranges and onions to the top. Sprinkle with arugula and crumble your creamy goat cheese over the top.
  3. Drizzle lightly with olive oil and balsamic. Finish with sea salt.
  4. Slice with a cookie cutter or a knife into pizza shaped pieces and serve cold.
